Beer and Ale Experiments
We made an ale (from Harrison's Description of England, 1577), a beer (The Closet of Kenholm Digby, Knight, Unlock'd, 1669) and a small ale (from Markham's The English Housewife, 1631)

 We used modern equipment as the original calls for 80 gallons of boiling water. Improvised mash tub made from an old fermenter, the bottom of an ice cream bucket and some plastic plumbing.  Finely ground long pepper for Mrs Harrison's Ale. The recipe scaled to 0.3g.  Boiling the wort to make the protein flakes clump together.  Chilling the wort to yeast pitching temperature.  Mrs Robinson, her small ale  Checking the amount of sugar in the wort. The final brew came out at about 3% alcohol.  Markham suggested using split  The final product, served from a leather jug.
